MORE INFOPierre TilquinFed up with research after earning a degree in bioengineering and a PhD in statistical genetics, Pierre Tilquin turned to an interest that had spawned during his PhD studies – lambic. After an intensive brewing course at Leuven University, Pierre worked for a year at Huyghe Brewery before spending six months each at Drie Fonteinen and Cantillon under the tutelage of Armand Debelder and Jean van Roy, respectively. The plan for a blender was fomented by these experiences. It had been twelve years since a new gueuze-producer had emerged in Brabant (the previous was Geuzestekerij De Cam in 1997). Pierre then took a job at a bank in order to pay the bills for the newly-created Gueuzerie Tilquin, which started in January 2009, but would not have any product to sell until 2011, which was a blend of 1 and 2-year-old lambics. In the following seasons, 3-year-old lambics were used in the blends. The Gueuzerie Tilquin is the first gueuze blender in Wallonia and has been growing steadily since its inception and now enjoys a world-renowned reputation for creating top-notch lambic and gueuze. Breakside Brewery’s Ben EdmundsBen Edmunds is the brewmaster at Breakside Brewery in Portland, Oregon where he oversees the company’s production brewery and two pub breweries. As founding brewer at Breakside, he helped grow the company from a small brewpub into a successful regional brewery. Under Ben’s leadership, Breakside has won many medals at international competitions, including the World Beer Cup Great American Beer Festival, and Breakside has twice been named “Brewery of the Year” at the Oregon Beer Awards. Educated at the Siebel Institute and Yale University, he is a former President of the Oregon Brewers guild, a judge at the Great American Beer Festival, and a visiting lecturer in brewing science at Lewis & Clark College. He regularly speaks on the topics of sour beers, barrel-aging, American hoppy beers, fruit handling and brewery leadership. Chef Connor MartinFormer sous chef at Boke Bowl, Connor is the co-founder of the acclaimed Mian PDX inspired by regional Chinese cuisines. Eater named Connor as one of the 2016 Young Guns semi-finalists and we’re thrilled to have him collaborate with our brewers again this year to create this special dinner.
